I wanted to share some photos of a few dishes I brought to a 2019 summer BBQ. Who said vegans couldn’t participate in the summer celebrations? Check out the photos below for some summer BBQ inspiration. I wasn’t hosting the party, but I sure did bring enough for everyone to eat!
Grilled Corn
It’s easy, cheap, and everyone loves it! Make it vegan with Earth Balance instead of traditional butter. Add a spritz of lime and a dash of chili powder for extra zing!

Mushroom Steaks
For when you want something a bit “meatier” than just veggies.
Marinate the mushrooms in balsamic vinegar and garlic, then grill and top with chimichurri. Slice and serve.
Veggie Kebabs
Everything is more fun to eat when it’s on a stick! Especially marinated veggies and Beyond Sausage.
Marinate the veggies in garlic, oil, and your favorite fresh herbs. Then stick a skewer through them and place them on the grill. Turn over after a while and then remove once they’ve got those wonderful char marks.
It’s so good that the omni guests won’t even realize that it’s not made out of animal flesh!

Herbed Potato Salad
Like regular potato salad, except instead of mayo you use oil. And add a bunch of herbs. So more like pesto potatoes really. I’m so sorry I didn’t take a picture of this one, it’s really delicious. I much prefer this version over the southern style potato salad.
Fruit Salad
A quick and easy fruit salad for when you want something fresh to balance out the other BBQ dishes.
Just a bunch of chopped fruit, lime juice, and agave nectar mixed together. It makes a great dessert when paired with CoCo Whip.
